Roasted Chicken Legs with Versatile Spice Rubs


A stress-free recipe to prepare chicken legs in minutes after a hard day’s work! Simply rub the legs with a spice mixture and pop them into an oven. Choose your favorite from a list of versatile spice rubs below or create your own. This is a really easy chicken recipe. To have crispy skin, make sure to pat dry the chicken before applying the rub.

Yield: 2 servings


  • 2 or 3 chicken legs (about 2 pounds)
  • 1 tablespoon olive oil
  • Spice rub (see a list of suggestions below or create your own)


  • 1/2 tablespoon butter for each piece of chicken leg


  • Heat the oven to 450 degree F.
  • Remove excess fat from chicken. Wash and dry off the chicken on all sides.
  • Add oil to spice rub and combine well.
  • Rub spice oil mixture over chicken.
  • Place the chicken in a baking pan
  • Optionally, top each leg with a piece of butter.
  • Roast the chicken until juices run clear — about 30 minutes or when its internal temperature reaches 165 degrees.
  • Serve the chicken with vegetables, rice, or side dishes of your choice.

Spice Rub Suggestions

  • Cardamom Rub
    • 1/2 teaspoon ground cardamom
    • 1/2 teaspoon salt
    • dash freshly ground black pepper
  • Garlic Rub
    • 1/2 teaspoon garlic powder
    • 1 teaspoon salt
    • 1/2 teaspoon freshly-ground back pepper
  • Cumin Rub
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon salt
    • dash ground red pepper
  • Cumin and Garlic rub
    • 1/4 teaspoon ground cumin
    • 4 cloves garlic (minced) or 1/2 teaspoon garlic powder
    • 1 teaspoon dried leaf oregano
    • 1 teaspoon chili powder
    • 1/2 teaspoon salt
    • dash freshly ground black pepper
